Braised Collard Greens with Bacon

I N G R E D I E N T S

3 bunches fresh collard greens

6 strips thick-cut uncured bacon, diced

2 Tbsp white vinegar

½ c bone broth, any flavor

M E T H O D 

1. Clean collards and peel leaves away from spines. Cut leaves into 2"-wide strips and set aside.

2. Fry bacon in large cast-iron skillet over medium-high heat until cooked through but not crispy. Add greens to skillet and stir-fry until dark green and beginning to wilt, about 5 minutes. Add vinegar, stir, and cook 1 to 2 minutes more.

3. Add broth, reduce heat, and simmer 8 to 10 minutes, until collards are tender. Season with salt and pepper to taste and serve.

Store any leftovers, refrigerated, up to 1 week.
