Our Favorite Vegan Summer Recipes

Dr. Hilda Gonzales, our lead practitioner, wears many hats INCLUDING being one of our favorite vegan recipe artists. Check out her Anti Inflammatory Tonic & Summer Cauliflower Ceviche recipes below and add them to your must try summer list!

ANTI INFLAMMATORY TONIC:

This tonic recipe is our go-to for reducing systemic inflammation. It contains citrus to add sweetness & Vitamin C; ginger, cayenne pepper and turmeric for their incredible anti-inflammatory properties; and black pepper for its synergistic ability to enhance the properties of turmeric.

You can enjoy it as a morning revitalizing shot, or as a delicious mocktail by adding it to some sparkling water for an evening elixir.

Anti Inflammatory Tonic San Diego

INGREDIENTS
Juice of 1 orange
Juice of 1/2 lemon/lime
1/2 tsp of turmeric powder or 1/2 inch of fresh turmeric (peeled)
1/2 tsp of ginger powder or 1 inch of fresh ginger (peeled)
1/4 tsp of black pepper
1/8 tsp of cayenne pepper (or less if too spicy)
1/4 cup of water
1 tsp of maple syrup (optional)

STEPS:

Throw everything in your blender, mix and strain if necessary. You can also mix it with sparkling water to indulge in an evening tonic. You can make it ahead of time and keep it in a sealed jar for up to 3 days in your refrigerator.
Drink it daily or as needed.

This is PERFECT for delayed onset muscle soreness, menstrual cramps, digestive bloating and seasonal allergies … Why?

You guessed it, they all have an inflammatory element.


SUMMER CAULIFLOWER CEVICHE:

Cooling, hydrating & delicious. Oh, and no cooking required!

Summer Ceviche San Diego

Ingredients:

  • 1-2 cups of finely chopped cauliflower

  • 1 cup of finely chopped carrots

  • 1 cup of chopped cucumber

  • 1/2 cup of finely chopped onion

  • 1 teaspoon of dehydrated cilantro/coriander OR 1/2 cup of fresh cilantro

  • optional: 1 tablespoon of seaweed flakes/dulse flakes

  • Juice of 4-5 large lemons

  • Salt to taste.

    STEPS:

  • Mix ingredients thoroughly

  • add desired salt to taste

  • ENJOY!
