Saffron & Sage held its Therapeutic Truffles workshop on February 8, 2018 in our gathering room in Mission Hills. Chef Perla, one of Saffron & Sage's in-house chefs, led the class in truffle making and shared her knowledge of the therapeutic attributes of truffles.

Perla stressed the importance of making these treats with high quality super foods, so there would be no guilt associated with indulging in chocolate. They were made with therapeutic and medicinal ingredients.

T R U F F L E   B A S E 

We used high quality dark chocolate chips and high quality full fat coconut milk to make the truffles. Dark chocolate in general has high antioxidants, which can reverse cellular damage. 

T O P P I N G S

Topping options: cacao, beet root powder, pistachios, maca, almonds, matcha, hemp seeds, and coconut flakes.

Beet Root powder - antioxidants + hormonal balance + blood health

Maca - protein + hormonal balance + energy (especially great for adrenal fatigue) + adaptogenic

Hemp Seeds - major source of protein + energy

Coconut flakes - quality fat source + sweet

Pistachios - super food + good fats + protein

Almonds - fats + protein + magnesium 

Cacao - different from cocoa, contains all the plant nutrients, high in antioxidants + anti-inflammatory

M E T H O D 

- Bring coconut milk to a light boil, then pour this into a bowl of chocolate chips (just enough to cover)

- Stir to combine, creating a medium to thin consistency 

- Refrigerate mixture for at least one hour 

- Cool hands in an ice bath/with cold water prior to handling chocolate, then scoop chocolate into balls with a melon baller or spoon roll to form a ball shape 

- Roll into toppings

-Serve immediately or refrigerate

There is therapy in creating and reflecting on your creation. Perla reminded the group that to truly enjoy our creations and the unique taste of each bite, we must eat with all of our senses.
